It needs a mind gifted in structure and fine attention to detail to draft out plans that ensure an array of necessary tasks get done on time, and without needless conflict or confusion. One more proactive concern for food hygiene, however, is pest control. It’s a reputation killer on a par with illness outbreaks if insects or vermin are allowed to infest food production spaces, and pests often precede illness and public safety incidents. Implementing rigorous plans for Hazard Analysis and Critical Control Points (HACCP) are key tasks, along with regular reviews and record- keeping of all action towards compliance, to remove as much hassle as possible from inspections, and promote safety on the supply chain. Running side by side with the safety of your products and the public is that of your staff, and any machinery or equipment. All three must work harmoniously and effectively together, with as little risk of danger as possible, to provide a productive workplace and quality for your customers. Installing security systems, maintaining safety equipment and conducting safety drills are all indispensable responsibilities, as well as those ever-present compliance needs. But by far the most important concern is training staff for everyday safety and emergency preparedness. An entire team with know-how on how to work safely and with risk awareness will make facilities management much easier, sharing responsibility equally between all necessary employees, and encouraging them to look out for their workplaces and colleagues independently of advice and monitoring. Proper training will also allow operatives to handle and clean equipment thoroughly. This is another obvious must in food preparation, which can never be at its best without well cared-for kitchen equipment. Regular maintenance, timely repairs, and equipment calibration will ensure that all appliances work optimally, keeping the production line flowing and treating ingredients with optimum care. Funding boost for plant-based ‘Cheese from Peas’ to develop commercial processes Alternative protein research exploring using peas to make sustainable plant-based cheese has received funding from Innovate UK to develop commercial processes for new products. ‘Cheese from Peas’ is a new product being developed by researchers from the University of Nottingham and spin-out company The Good Pulse Company who are developing techniques to turn yellow peas grown in the UK into a sustainable plant- based cheese. This latest funding of over £300,000 from Innovate UK adds to over £370,000 in investment from scientific research organisation Rothamsted Research through their programme SHAKE Climate Change, and from food technology venture capital investors Big Idea Ventures. The grant has allowed the company to hire researchers from the university and also bring further expertise from other academics working on adjacent research areas.
