A new meat science education and training lab at the University of Missouri is expected to drive growth and innovation across Missouri’s agricultural supply chain, with a focus on workforce development and processing capacity.
Construction has begun on the Michael L. Parson Meat Science Education and Training Laboratory, a project backed by $35 million in state funding. The facility aims to address a long-standing gap in meat processing training infrastructure, equipping the next generation of processors with industry-specific skills.
The Missouri Cattlemen’s Association has been closely involved in the development of the lab, positioning it as a strategic asset for members operating in both livestock feeding and meat processing. With an expected opening in 2026, the facility is anticipated to support B2B collaboration, enhance value-added opportunities for producers, and improve regional processing capabilities.
