AI-powered device brings efficiency to frozen tuna grading

Japanese startup Sonofai has introduced a new AI-enabled device designed to assess the fat content of frozen albacore tuna without cutting into the fish, aiming to streamline seafood processing and improve grading accuracy for commercial buyers and processors.

The device, called the SONOFAI T-01, uses ultrasound analysis powered by Fujitsu’s AI technology, initially developed for its Kozuchi AI service, and was developed in collaboration with Ishida Tec Co. and Tokai University. It is capable of analysing a whole tuna in just 12 seconds and requires only a single operator.

Traditionally, fat content is gauged by slicing thawed tuna and visually inspecting the cross-section—a manual, inconsistent process that reduces product value and relies heavily on skilled labor. By automating this task, the new system reduces reliance on experienced graders, cuts labour costs, and minimises misclassification of premium fatty tuna cuts.

Initially launching in Japan, the SONOFAI T-01 is designed for wholesalers, distributors, and processors seeking greater efficiency, cost savings, and consistency in selecting high volumes of tuna.
